Ever have the Curry Chicken Salad from Whole Foods? I was bummed I didn't grab a small container of it, then I realized I could make it myself. Duh! I made a Curry Chicken Salad hoagie for a quick lunch today. Yum! How? Here's what you need:
Chicken Salad Ingredients:
Shredded or canned chicken
Mayo
Celery Seed
Pepper
Curry Powder
The rest:
baguette
olive oil
pepper
tomato
arugula
Grapes - I used Moon Drop grapes, cut lengthwise
Make the chicken salad: In a bowl, add chicken, mayo, celery seed, pepper and curry powder to shredded chicken (I used Costco canned chicken). Add enogh mayo to make sure it’s not dry but not oozing mayo.
Cut and scoop the inside of the baguette to make space for your ingredients. Add olive oil and more pepper, if interested*.
Add chicken salad, then tomato and arugula. Then, I added my grapes. Voila.
Frankly, I was skeptical of adding the grapes with the curry but it was a hit! The flavors melded together perfectly, and I was super happy.
A few notes. I love arugula because it’s adds some spicy flair. Ever had Moon Drop grapes? Ever had them? They are super oblong and have a unique, sweet taste. I also love Cotton Candy grapes, but I think they'd be too overwhelming for a hoagie.
